Rabbit into wine cooked with olive oil and oregano

Ingredients

2.5 kg. rabbit
1kg. chopped onion
180 gr. White wine
100 gr. Olive oil
800 gr. Fresh tomatoes
200 gr. Flour
150 gr. Demi - glace sauce
1 pinch salt
1 pinch pepper
1 pinch oregano
3 bay leaves
40 gr. Parsley



Preparation

You cut the rabbit into cubes and you scald it for few minutes. Then you let it cold.
In a pot you put olive oil, the chopped onions and the rabbit. You cook the ingredients. After that you add the fresh tomatoes, the flour, the demi - glace sauce, the wine and you cook them for half an hour. You add also salt, pepper, oregano and the bay leaves.
You serve the food with parsley.
