Sfougato with potatoes and zucchinis


  • 6 eggs
  • 120 gr. Zucchinis (cut into rings)
  • 150 gr. Potatoes (cut into rings)
  • 100 gr. Chopped onion
  • 40 gr chopped parsley
  • 120 gr. Olive oil
  • 100 gr. Grated Regato cheese
  • 1 pinch salt
  • 1 pinch pepper


You cut the potatoes and the zucchinis into rings. In a pan warm the olive oil. Now you fry the potatoes and the zucchinis. You hit the eggs and then you admit the Regato cheese. You hit the ingredients gut each other.
In another pan you admit the potatoes, the zucchinis and the onions. You add the beaten eggs with the Regato on these ingredients. You wait until the eggs are fried. For seasoning are used salt and pepper.
You serve sfougato with grated Regato cheese and with parsley!
